Peanut Chicken Noodles

2 cups rotisserie chicken (or leftover chicken)
8oz brown rice pad Thai noodles (we use Annie Chun’s)
1 red bell pepper, cut into thin strips
3-4 carrots, grated
1/2 cup cilantro, chopped
4-5 scallions, diced
- For the Peanut Sauce
1/2 cup peanut butter
2 Tbs tamari or soy sauce
Juice of 1 lemon
2 Tbs maple syrup
1-2 Tbs fresh ginger, grated
2 cloves garlic, grated
Directions
- In a large bowl, combine peanut butter, tamari, lemon juice, maple syrup, ginger and garlic. Whisk until well combined.
- In another large bowl, soak noodles in boiling water until al dente. Strain and add to peanut sauce, stir to combine.
- Add the bell pepper, carrots, cilantro, chicken, and scallions to the noodles and peanut sauce mixture. Toss until evenly combined.
- Top with more scallions to garnish. Enjoy!
