Ingredients

  • 2 cups rotisserie chicken (or leftover chicken)

  • 8oz brown rice pad Thai noodles (we use Annie Chun’s)

  • 1 red bell pepper, cut into thin strips

  • 3-4 carrots, grated

  • 1/2 cup cilantro, chopped

  • 4-5 scallions, diced

  • For the Peanut Sauce
  • 1/2 cup peanut butter

  • 2 Tbs tamari or soy sauce

  • Juice of 1 lemon

  • 2 Tbs maple syrup

  • 1-2 Tbs fresh ginger, grated

  • 2 cloves garlic, grated

Directions

  • In a large bowl, combine peanut butter, tamari, lemon juice, maple syrup, ginger and garlic. Whisk until well combined.
  • In another large bowl, soak noodles in boiling water until al dente. Strain and add to peanut sauce, stir to combine.
  • Add the bell pepper, carrots, cilantro, chicken, and scallions to the noodles and peanut sauce mixture. Toss until evenly combined.
  • Top with more scallions to garnish. Enjoy!
